Growing Practices : Soil work, green harvesting (de-suckering, leaf thinning, bunch distribution) reasoned culture regarding chemical intervention and fertilizer enrichment.
Harvest : Hand-picked in small crates, rigorous sorting bunch-by-bunch at perfect maturity.
Vinification : The harvest is received on the air-jet sorting table then transported via a conveyor belt directly into 225 litre barrels. A pre-fermentation maceration is effectuated for 3 to 4 days then when the alcoholic fermentation begins, the extraction is undertaken by a small series of punching down the cap every 5 hours (No pumps are used). After the post-fermentation maceration, the wine is run off together with its lies.
Ageing : The Malo-lactic fermentations are undertakne in new oak barrels. The wine is then aged on lees thanks to a rotating oxo-line support system. The barrel ageing will last for between 16 and 18 months.
Food and wine pairings : It will match well with red meats (grilled or as stew), game meat, aged cheeses or even with chocolate cake.
