  • Growing practices: Soil tilling, leaf thinning and bunch distribution, reasoned culture regarding chemical intervention and fertilizer enrichment.
  • Harvest: Machine harvest with sorting table.
  • Vinification: Cold pre-fermentation maceration with carbonic ice and in temperature controlled vats. The extraction is undertaking traditionally by pumping over. Then post-fermentation maceration before the run-off.
  • Ageing cellar: The malo-lactic fermentations are undertaken in new oak barrels, the wine is then barrel aged over lees. The ageing will last between 14 and 16 months.
  • Tasting notes: Deep robe, purple glints. Expressive nose, mixing ripe fruit with a lovely toasted woody aroma. The palate is dense, the tannins are fine-grained yet present. It will perfectly accompany grilled or stewed red and white meat, game or aged cheeses…or surprisingly with chocolate cake. Service temperature: 16 °C.
